What many may not know is I am a type 1 diabetic my everyday struggle was trying to keep my blood sugar from spiking after meals and dropping after correcting. I was experiencing 3am low blood sugars every night and it was exhausting. I knew I had to find something to get my eating on track. When I asked Amy about this challenge she was confident I was able to do it and I was going to love it! My first week I was shocked at just what this plan did to my blood sugar in the first time ever my monitor was experiencing straight lines, no spikes or lows.
